1 head cauliflower; cut in bite-sized pieces
Basic Cheese Sauce (pg. 38)
Salt & Pepper to taste

Directions:
In a large pot, boil 6 to 8 cups of salted water on high heat. Add cauliflower, cover and remove from heat. Cauliflower will be done when it is slightly translucent and/or fork tender. About 5 minutes.

While water is boiling, prepare cheese sauce from page 38.

Once cauliflower is done, drain well, add salt and pepper to taste and toss with cheese sauce in medium bowl.

Broccoli may be substituted for cauliflower.

Broccoli is done cooking when it is bright green in colour and fork tender.
