1/2lb (1c) red beans
4c water
1/2lb Italian sausage (remove casing)
1Tbsp olive oil
4 large cloves garlic, minced
1 large onion, chopped
1/2tsp dried thyme
1/2tsp dried rosemary
4c chicken stock

Directions:
Directions:
Wash, sort, drain red beans. Add 4 cups water and beans in large pot. Bring to boil, remove from heat and set for an hour covered. Rinse, cover generously with water, bring to boil, cover with lid ajar, lower heat to a simmering boil. Cook for 1 hour or until beans are tender.

While beans are cooking, saute onions and garlic in olive oil, then add carrots and sausage to saute mixture (until tender). When beans are ready, cool and drain water. Add chicken stock, saute mixture, and seasonings. Stir and simmer a few minutes. Serve over rice.
