Ingredients:

Mix
3 eggs beaten
2 c sugar
3 tsp vanilla
1 c oil
2 c grated zucchini (or shredded)

Measure
3 c flour
1 tsp salt
3 tsp cinnamon
1 tsp baking soda
¼ tsp baking powder
1 cup chopped nuts

Directions:
Directions:
Mix all these ingredients and add to first mixture, stirring well.
Pour into two greased loaf pans. Bake at 350 ̊ for about one hour. Test with toothpick.
A few raisins may also be added if desired. (Yellow are my favorite!)
