5lb salmon, head and tail removed
Lemon juice

SALMON STUFFING

3 Cups dry bread crumbs
2 TBSP onion flakes
1 tsp dried parsley
½ tsp poultry seasoning
½t tsp salt
⅛ tsp pepper
¼ tsp basil
⅔ cup chopped unpeeled zucchini
1 medium tomato chopped
½ Cup butter or margarine, melted

Sprinkle cavity of salmon with lemon juice.

SALMON STUFFING: In medium bowl combine remaining 10 ingredients in order given. Stuff fish. Use tooth picks to hold salmon together. Wrap in long piece of foil. Place on baking pan. Bake in 450 F oven allowing 15 minutes per inch of thickness measured at thickest part of fish. Fish will flake easily with fork when done. Slip a fork under the skin. Lift it off gently a little at a time. Remove top half of fish in sections, pulling it away from the bones. Remove bones from bottom half. Turn fish to remove remaining skin. Break apart to serve.
