2 cups sugar (Domino)
4 eggs (large)
1½ cups oil (Mazola corn oil)
2 cups flour (Pillsbury)
3 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla
3 jars (4 oz. each) baby food carrots (12 oz. total)
1 cup raisins, plumped

Directions:
Directions:
Blend sugar, eggs, carrots, and spices. Beat with mixer.

Add flour, beat until thick and creamy.

Add 1 cup (plumped) raisins.

Pour into a well-oiled and floured 13x9" pan.

Bake for 45 minutes to 1 hour in 350º F oven.

PLUMP RAISINS: Put raisins in small saucepan. Cover with cold water and bring to a boil. Remove from heat and let sit ½ hour or longer. Strain before adding to cake batter.
