5 Tablespoons butter
⅓ cup flour
¾ cup brown sugar
½ cup sugar
2 cups scalded milk
3 egg yolks (beaten)
¼ teaspoon salt
1 teaspoon vanilla
1 Tablespoon FIRM butter
1 pie shell

Directions:
Directions:
Start to scold milk in pan - keep hot.

Melt 5 Tablespoons butter in HEAVY pan over medium heat. Stir in flour. Keep stirring, forming a smooth paste. Stir in both sugars, stirring constantly until smooth and all granules are picked up.

Add scalded milk (½ cup at a time), stirring until mixture boils after each addition.

QUICKLY take 3 Tablespoons of the milk and add to the beaten yolks. Add immediately to milk mixture. Cook for 3 minutes.

Remove from heat and add 1 Tablespoon butter, vanilla, and salt. STIR.

Set aside to cool. After 5 minutes, stir. Cool 5-10 minutes more and put into pie shell.

Add meringue.
