2 TBSP Olive Oil
½ medium onion; finely chopped
1 small carrot or ½ large carrot; finely chopped
1 small stalk of celery; finely chopped
2 TBSP chopped, fresh parsley
1 clove of garlic; minced
½ tsp dried basil OR 2 TBSP chopped, fresh basil
1 lrg (28 oz) can whole tomatoes, including juice OR 1¾ pounds fresh tomatoes, peeled, seeded and chopped
1 tsp Tomato paste
Salt and freshly ground pepper to taste

Heat olive oil in large pot on medium heat. Add onion, carrot, celery and parsley. Stir to coat. Reduce heat to low, cover the pot and cook for 15 to 20 minutes. Stir occasionally until vegetables are softened and cooked through.
Remove cover and add garlic. Increase heat to medium high. Stir and heat through for 30 seconds.
Add the tomatoes, including juice making sure to break them up with fingers before hand if they were canned. Add tomato paste and basil and add salt and pepper to taste.
Bring to a low simmer. Reduce heat to low and continue to cook, uncovered, until thickened; about 15 minutes.

If you prefer a less chunky sauce, you can purée it in a blender to give it a smoother consistency.
