3/4 cup unsalted butter
1 cup sugar
1/2 bag cranberries (6 oz)
3/4 cup self rising cake flour

1 teaspoon cinnamon
2 large eggs
1-1/2 T whole milk

Directions:
Directions:
Pre-heat the oven to 350 degrees and place a cookie sheet in the pre-heating oven at the same time.
In a tart dish (or cast iron skillet), melt the 1/4 cup of the butter on the stove top. Add 1/2 cup of the sugar, stir and then add the cranberries ensuring you coat all of the berries. Set aside.
In a bowl, add flour, salt cinnamon, remaining sugar, 1/2 cup butter and eggs. Mix to combine. Slowly add the milk to the mixture until it is a soft dropping consistency. Pour over the berries in your tart pan (or cast iron skillet). Transfer the pan immediately to the baking sheet in the warmed oven. Cook 30 minutes until cake is done.
Take out of the oven and place a plate over the cake. Turn it upside-down and lift the pan off, taking care not to burn yourself.
Serve warm with ice cream or sprinkle with powdered sugar.
