1 cup King Arthur Gluten-Free multi purpose flour or brown rice flour blend
1/4 teaspoon xanthan gum
1/2 teaspoon salt
1 1/4 cups milk, slightly warm
4 large eggs
2 T butter, melted

Directions:
Directions:
Preheat over to 400 degrees. Grease a 12 cup popover pan (or standard muffin pan).
In a blender, mix eggs, butter and milk. Whisk the flour and xanthan gum in a separate bowl. Add the dry ingredients to the blender and blend until mixed and smooth.
Pour into the pan, filling each cup 2/3 full. Bake 25 minutes at 400, then reduce the oven to 350 and bake an additional 15 minutes.
Remove from oven and prick each popover with a toothpick to release steam and let rest for 5 minutes.
