6 large Idaho potatoes
3 medium onions, peeled
4 eggs, lightly beaten to combine whites and yolks
1/4 to 1/2 cup all purpose flour
2-3 T salt
Black pepper
Peanut oil for frying

Directions:
Directions:
Grate the potatoes and onions in a food processor. Press out the excess water from the potato and onion mixture. Beat the eggs into the potato-onion mixture and add enough flour to make a light batter. Add salt and pepper.
Heat 1/4 inch oil in a large, heavy skillet. For each pancake, add 2 T of batter to the oil and flatten with a wooden spoon. Fry for 2 minutes on the first side, flip and fry another 30 seconds. Place over a paper towel to absorb oil and serve with sour cream and/or applesauce.

Pairs well with William's Applesauce.

Optional: You can use frozen hash browns instead of fresh potatoes.
