14 oz white chocolate, 35% cocoa
1 + heaped 1/2 teaspoon grated unsweetened coconut
1/3 cup coconut milk
1 cup minus 2 tablespoons coconut liqueur
1 heaped teaspoon sugar
5 1/4 oz while chocolate, 35% cocoa

Temper 7 oz white chocolate and pour a thin layer into your bar molds. Leave to set at room temperature for two days. Lightly toast grated coconut. Gently heat the coconut milk and liqueur. In a saucepan, cook sugar until it forms a light caramel. When caramel is ready, carefully pour in the heated milk-liqueur mixture, making sure not to splash yourself. Chop the 5 1/4 oz white chocolate and melt slowly in the microwave. gradually pour one third of the coconut caramel over melted chocolate. Mix it in quickly, drawing small circles. Incorporate second third of the liquid, using the same process. Repeat with the last third. Stir in the lightly toasted coconut. When ganache has cooled to 82 degrees, spoon it into a piping bag and partially fill the chocolate-filled molds; make sure that the ganache is no hotter than this when you fill the bars. Ensure you leave a space of just under 1/16 of an inch below the rim so that you will be able to fit in the closing layer of the bar. Leave to set for 24 hours in a cool room. Temper the remaining 7 oz of chocolate and pour into the molds to enclose the filling. Leave to set for 24 hours in a cool room.
