Meatballs

3/4-1lb ground pork sausage
3/4-1lb ground beef ~ lean
1 Lg Egg
1 cup Bread crumbs
1/2 tsp black pepper
2 tsp salt
2 tbsp Parmesan cheese

Mix all above ingredients together in a large bowl and form balls. Sized according to your liking. Brown in a large frying pan with 1 tsp Olive Oil. Once done you can serve with accompanying sauce.

Note: You can also just brown meat with garlic and seasonings then add all ingredients to sauce and cook as directed. If you prefer not to have meatballs but ground meat.

2 Tbsp Olive Oil
2 28oz cans crushed tomatoes
1 12oz can tomato paste
1 15oz can tomato sauce
1 tbsp sugar
2 tsp salt
1 bay leaf
2 cloves garlic or powder
1 tbsp basil
1 tsp oregano
Use a 6 quart pot or bigger ... saute garlic in Olive Oil on low heat. When garlic starts to brown add tomatoes, sauce and paste, stir. Add next 5 ingredients, stir well. Cook on lowest heat for 1 1/2 hours. Stirring occasionally and tasting. Add seasoning to taste.


Note: This can be store separately in the freezer in individual freezer bags.
