1 large sweet potato
1 large clove garlic, crushed
3 T tahini
2 T lemon juice
2 T extra virgin olive oil
1 tsp maple syrup
1 1/2 tsp ground cumin
1 1/2 tsp chili powder
1/2 tsp cinnamon
1/2 tsp paprika
1/2 tsp salt
1/4 tsp ground ginger

Directions:
Directions:
1) Wash, pierce, bake sweet potato; set aside to cool sufficiently to handle.
2) While the potato cools, add the garlic, tahini, olive oil, lemon juice, maple syrup, cumin, chili, cinnamon, paprika, salt and ginger into your food processor.
3) Then, when the potato has cooled down, remove and discard the peel. Add the potato into your food processor with all of the other ingredients, and blend everything until completely smooth. When this is done, transfer the dip into a bowl and top it with some extra oil, chili and other seasonings to finish.
4) Serve with cucumber “surfboards” (longer diagonal slices) and pita crackers.
