4 slices bacon, chopped (I use bacon already cooked and crumbled in a bag)
2 tablespoons bacon grease
2 tablespoons or 1/4 stick butter, if not using bacon grease
3 onions, sliced
3 tablespoons all-purpose flour
4 cups water
1 large vegetable bouillon cube (or 1 tablespoon dry powdered vegetable bouillon)
4 potatoes, diced
8 ounces container sour cream
4 teaspoons chopped parsley

Directions:
Directions:
In a large pot, sauté onions in butter. When soft, add flour, cook, stirring for one minute. Gradually add water, bacon, crumbled bouillon cube, and potatoes. Simmer for 10 minutes, or until potatoes are cooked. Gradually stir in sour cream (I use a whisk), and parsley.

Personal Notes:
The original recipe calls for cooking the onions in bacon grease and butter. Sometimes I add a spoonful of bacon grease left over from actually cooking bacon just for flavor, but I've used the pre-cooked, crumbled bacon with good results. I also use dehydrated parsley in a pinch. Sometimes I smash the potatoes and onions a little with a potato masher for a smoother consistency.
