3 slices bacon (or turkey bacon)
2 c chopped onion
3 cloves minced garlic
2 green peppers
1 lb sweet Italian sausage
3 lbs chicken thighhs
1/4 c olive oil
1 c frozen peas
1/2 lb hot Italian sausage
4 c chicken stock
salt & pepper
16 stuffed green olives
1/2 tsp saffron
1 Tbs paprika
2 c uncooked rice
**optional-prawns, cod, clams & tomatoes

Directions:
Toss sausages into simmering water for 10-15 min

Chop green peppers, cut bacon into small squares & toss into a skillet along with onion, garlic & peppers

Cut partially cooked sausage into 1/2" pieces & add to skillet

Cook until onions are soft

Spoon into casserole along with 1/4 c chicken stock & saffron

Heat olive oil in skillet, sprinkle chicken with salt, pepper, paprika & brown on both sides

Add to casserole

Rinse & drain rice then scatter over casserole

Add the rest of the stock & cover

Bake 20 min at 400 F

Remove, stir rice, recover & cook another 15-20 min until rice is done

Remove, cover & turn oven down to 300 F

Add peas, olive & optionals and cook another 10 min
