1/4 cup oil
1 cooked chicken, boned or cut up.
1 1/2 lbs. sausage
2 heaping tsp. Cajun seasoning
1/2 cup bell pepper
1 cups onion, chopped
1/2 cup celery
1 Tbsp. garlic, chopped
1/2 cup green onions, chopped
1 cups long grain rice
1 1/4 cups chicken broth

Directions:
Directions:
Season and brown chicken in oil over medium heat. Add sausage to pot and saute with chicken. Remove meat from pot.
Saute onions, celery, green pepper and garlic to tenderness that you desire. Return chicken and sausage to pot. Add liquid and Cajun seasoning to mixture.
Add rice and return to a boil. Reduce heat and cover pot. Simmer for 10 minutes. After 10 minutes
turn rice from top to bottom completely. Add 1/2 cup green onions. Cover and cook 15 more minutes.
