1 lb. Hot Italian Sausage or Chorizio
1 1/3 C. Chopped Yellow Onion
2 - 15 oz cans diced tomatoes, undrained
1 tsp. dried basil
4 1/2 oz. (2 small cans) sliced black olives, drained
1 C. Heavy or Light cream
12 oz. Rigatoni pasta, cooked according to package directions.
Garnish with Parmesan Cheese

Place sausage and onion in a large skillet. Cook over medium-high heat until sausage is no longer pink. Drain. Add tomato & basil to pan. Bring to a boil. Reduce heat to low and simmer uncovered 10 to 15 minutes. Stir in olives and cream. Cook until thoroughly heated, but not boiling. Stir in cooked pasta. Serve with cheese.
