Giblets and Neck from Turkey
2 c. water
1 can chicken broth
½ stalk celery
¼ c. chopped onion
4 tbsp. butter
4 tbsp. flour
2 c. pan drippings
½ milk or half and half
½ tsp each salt and pepper

Directions:
Directions:
Place giblets, neck, celery and onion in saucepan with water and broth, season with salt and pepper, bring to a boil. Reduce heat and simmer for 1 1/2 hours.

Remove meat, cool and shred neck meat and chop giblets.

Melt butter in a heavy saucepan and stir in the flour. Cook and stir for 3 to 5 minutes, or until butter begins to turn brown. Slowly stir in 2 cups broth and milk or half and half. Continue cooking and stirring until thickened. Season with salt and pepper. Stir in the chopped meat and serve
