1 cube butter (unsalted)
cup unflavored oil (like canola)
cup regular sugar
cup brown sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon salt
1 teaspoon baking soda
3 cups old fashioned oats
1 cup walnuts
1 cup raisins

Directions:

Oven at 350
Mix soft butter and oil together, add both sugars and blend. Add egg and vanilla. Next stir in flour, salt and soda. Add the oatmeal, raisins and walnuts.
Mix until all incorporated but don't over mix.
Scoop onto baking sheet.
Cook for 8 minutes on middle rack of oven. They are done when the cookie edges are brown and the middle looks uncooked.

Be sure to use old fashioned oats, it makes a difference.
You can of course vary by adding chocolate chips, eliminating nuts, using cranberries etc.
I like to toast the nuts a little before adding to recipe.
I also like to use golden raisins instead of the dark variety,
Watch the cookies as baking because ovens vary, just remove from oven as soon as the edges are brown.
