6 eggs
1 cup flour
1 cup milk
1/2 tsp salt
5 Tbsp butter

Preheat oven to 450º

Heat butter in a 12 " skillet ( cast iron if you have it )
Whip eggs until thick and lemony.
Add milk, flour and salt. to beaten eggs
Pour batter in skillet.
Bake for about 15-20 minutes until golden brown and puffy.
Serve immediately with fresh lemon juice and powdered sugar or pure maple syrup or berry jam

These are always a little breakfast "gift".
If you use a regular skillet remember to wrap the handle in foil before baking.
Can also be made in 9x 13 glass baking dish
My mom made these all the time.......way before you could get them in a breakfast restaurant.
