1 shallot, minced
6 eggs
2T fresh parsley
1/3 cup grated Pecorino Romano or Parmesan Cheese
1/2 pound roasted asparagus, cut into 1/2 inch pieces
salt and pepper to taste

Directions:
Directions:
Heat 1T EVOO in skillet. Saute shallot for 1-2 minutes, then add to a bowl with all other ingredients. Add another 1T EVOO (or butter) to the skillet and pour in the egg mixture. Reduce heat to medium, breaking up the mixture as it cooks to allow uncooked liquid into the bottom of the pan. Once set, flip and allow 1-2 more minutes of cooking.
