2 cups chopped medium yellow onions
1 pkg. of Pepperidge Farm bread crumbs
1 pound Ritz crackers
1 tsp. garlic salt
1 tsp. Kosher salt and pepper
20 Jumbo shrimp

Directions:
Directions:
Sauté the onions in 1 1/4 lbs. butter.
Crush the Ritz crackers in a plastic bag with a rolling pin.
Combine the bread crumbs, seasoning, crackers and onions in a large bowl.
Cut the shrimp in half being careful not to cut all the way through. Place on baking sheets.
Put the stuffing on top of the shrimp and pack it on so it doesn’t fall off.

Bake at 350º for 20 minutes.
Serve hot.

This is Mom’s/Nana’s recipe that she would make for Christmas. I think Aunt Emily showed her how to make this. It became a tradition that I miss so much.
