1/8 teaspoon sea salt
1 T sherry or red wine vinegar
1/2 small shallot (peeled and minced)
1/2 teaspoon Dijon mustard (Amora if you can find it, although it may require a trip to Paris)
3T-4T EVOO
herbs as desired

Directions:
Mix the salt, vinegar and shallot in a small bowl. Let stand for 10 minutes. Add the Dijon and 3T of EVOO. Stir to taste and add additional EVOO and salt as needed. If adding herbs, add before serving. Mix with greens.

Optional: Make a chicken paillard, by pounding out a chicken breast until very thin. Sauté the chicken in olive oil and season with salt and pepper. Serve with baguette and salad to make a Parisian lunch.
