Beer Crepes Recipe

3 T butter
1 onion, small finely chopped
1 c mushrooms, fresh sliced
3/4 c beer
1/4 c light cream
1/2 c ham, thinly sliced
2 T water, cold
1 T cornstarch
1/2 t salt
1/8 t pepper
1 c grated Swiss cheese
10 crepes, cooked
1 c Swiss cheese, grated

In skillet, melt butter, add onion and mushrooms. Cook over medium heat several minutes. Stir in beer, then, cream and ham. Simmer 2-3 minutes. Dissolve cornstarch in 2 T cold water. Add to mushroom mix. Season with s and p. Cook on low heat until mix thickens. Stir in one cup of cheese. Fill cooked crepes, fold over. Place in shallow pan. Sprinkle with remaining cheese. Broil until cheese melts.
