8 oz light smoked sausage, sliced and halved lengthwise
1 (15 oz) can whole kernel corn, drained
1 (14 oz) can diced tomatoes with garlic and onion
1 (15 oz) can lima beans drained
½ c chopped onion

Directions:
Directions:
Coat large pan with nonstick cooking spray. Add sausage and onion. Cook about 5 minutes or until sausage is lightly browned and onion is tender. Add lima beans. corn, and undrained tomatoes. Boil gently, uncovered, 8-10 minutes, stirring occasionally, until liquid is nearly evaporated.

This is a family favorite that we used to ask mom to make. I think we asked her to make it, just so that she would say the word "succotash".
