1.5lb skirt or flank steak
2T salt (Don’t worry – you’re throwing out most of this salt. You could cut it down if you’re concerned)
2 bay leaves
1/4 c. olive or veg oil
onion
1 red pepper (yellow and orange too pale)
1 green pepper
1T garlic
1/4C white wine
1/2t. cayenne pepper
1/2t. ground cumin
1-2 tbsp. fresh oregano, chopped OR 1/2 tsp. dried oregano
8-oz can of tomato sauce

Directions:

Boil beef with salt and bay leaves in water to cover + two inches, for 1.5 hrs. Remove, set aside to cool, and shred.

Saute garlic, onion, and peppers 3-4 min. Add wine, spices, and tom sauce with 4C of reserved broth (or less if needed). Add shredded beef and serve.

This is another recipe for Jessica Miramontes. Her husband is Mexican and so she tries to make recipes from his childhood. He remembers his recipe very fondly. Ropas Viejas means “old clothes” because the simmering beef looks like clothes being heated and washed on a stove, as they did in old-timey days. These days, I make this recipe ad-hock with just one onion, two bell peppers, skirt (or flank steak), tomato sauce, oregano, cumin, and broth. But the original recipe really makes the best version. Whenever I find skirt or flank steak on sale I ask Justin: “Do you want Ropas Viejas for dinner?” He always responds “YES!”
