Notes: This is another recipe for Jessica Miramontes. Her husband is Mexican and so she tries to make recipes from his childhood. He remembers his recipe very fondly. Ropas Viejas means “old clothes” because the simmering beef looks like clothes being heated and washed on a stove, as they did in old-timey days. These days, I make this recipe ad-hock with just one onion, two bell peppers, skirt (or flank steak), tomato sauce, oregano, cumin, and broth. But the original recipe really makes the best version. Whenever I find skirt or flank steak on sale I ask Justin: “Do you want Ropas Viejas for dinner?” He always responds “YES!”
