1 ½ slices white bread
½ cup shredded extra sharp cheddar cheese
½ cup shredded jack cheese
2 Tbsp melted butter
2 cloves garlic, minced
Salt & pepper
1 Tbsp flour
¾ cup heavy cream
½ cup chicken broth
1 head cauliflower cut into ¾ inch florets
1 tsp dry mustard
½ tsp dried thyme

For topping, heat oven to 450º. Pulse bread, 1 Tbsp cheddar, 1 Tbsp jack, 1 Tbsp butter, 1 clove minced garlic, ⅛ tsp salt, and ⅛ tsp pepper in food processor until coarsely ground.

Heat remaining butter, remaining garlic, and flour in a dutch oven over medium heat, stirring constantly until golden and fragrant, about 1 minute. Slowly whisk in cream and broth. Stir in cauliflower, dry mustard, thyme, ¼ tsp salt, and ¼ tsp pepper and bring to boil. Reduce heat to medium low and simmer covered stirring occasionally until cauliflower is nearly tender, 6 to 8 minutes. Off heat, stir in remaining cheddar and jack until incorporated.Taste for seasoning adding more salt & pepper if necessary.

Pour mixture into baking dish and top with bread crumbs. Bake until crumbs are golden brown and crisp, 10 to 15 minutes. Let cool 10 minutes. Serve.
