3 lbs unpeeled Red Potatoes, cut into ½ cubes
1 LG. Sweet Onion Vidalia chopped
3 T. Olive Oil
¾ Tsp. Salt
¾ Tsp. Black Pepper
⅓ cup Packed Chopped Mixed Fresh Herbs, such as Basil, Chives,
Parsley, Oregano, Thyme

Pre-heat oven to 450º

Arrange potatoes and onion in large foil-lined roasting pan. Combine oil, butter, garlic, salt, and pepper in small bowl.
Drizzle over potatoes and onions; toss well to combine.

Bake 30 minutes. Stir and bake 10 - 15 minutes or until vegetables are tender and brown.
