5 strips bacon, cut into small pieces
2 onions, thinly sliced
4 teaspoons brown sugar
4 garlic cloves, minced
1 teaspoon dried thyme leaves
Salt and pepper to taste
3 cups chicken broth
1/4 cup soy sauce
2 tablespoons tapioca (cornstarch or flour could also be used)
2 bay leaves
6 bone-in pork chops
1 tablespoon apple cider vinegar
Parsley, for garnish

Directions:
Directions:
Cook bacon until crisp. Place bacon on paper towel-covered plate, leaving bacon fat in pan. Using 2 tablespoons of remaining bacon fat, add onions, 2 tablespoons brown sugar, garlic, thyme, and salt to taste. Stir. Add 1 cup of chicken broth, scraping bottom to remove browned bits. Place mixture in slow cooker and add remaining 2 cups chicken broth. Add in remaining 2 teaspoons brown sugar, soy sauce, tapioca, and bay leaves. Stir to combine. Season pork chops with salt and pepper; add to slow cooker, pushing down into liquid. Cover and cook on low for 6-7 hours or on high for 4-5 hours. Place pork chops on serving plate; cover with foil. Remove bay leaves from sauce and as much fat (if any) from surface. Stir in vinegar and any additional salt and pepper to taste. Pour sauce on top of pork chops and add crumbled bacon and parsley.

Serve over rice, noodles, or mashed potatoes.
