2 T butter (more if needed)
1/2 C chopped onion
4 C chicken broth
4 Oz cheddar cheese , shredded. (Optional)
1 tsp garlic powder
2 leeks, cleaned and chopped
6 potatoes, peeled and cubed
1 C half and half
1 T chopped fresh parsley
Salt and freshly ground pepper to taste.

Directions:
Directions:
1) Melt butter in a pot over medium heat.
2) Cook and stir leeks and onion until they are tender, about 5 minutes.
3) Stir potatoes and chicken broth into onion mixture; simmer until potatoes are tender, about 20 minutes.
4) Pour half and half into potato soup and continue to simmer until slightly thickened, about 15 min more.
5) Stir cheddar cheese (if using) parsley, garlic powder, salt and pepper into soup until cheese is melted.
