1/2 cup butter
2 large red onions, sliced
6 large tomatoes, sliced
3 cups (12 ounces) Monterey Jack Cheese
1/2 teaspoon dry basil or 2 tablespoons fresh basil
Salt and pepper
1, 6 ounce package plain croutons

Directions:
Directions:
Preheat oven to 350º.

In a skillet, heat butter and sauté onions for 5 minutes. Stir in croutons and sauté for another 3-4 minutes. In a greased 2 quart casserole, layer half of the crouton-onion combination, tomatoes sprinkled with basil, salt and pepper, and cheese. Repeat layers, ending with cheese.

Bake for 35-40 minutes, or until cheese is melted and casserole is bubble.
