1 pound fresh, medium carrots
2 T oil
½ t salt
½ t sugar
1 c water
¼ t oregano
2 T vinegar
⅛ t pepper

Directions:
Directions:
Peel carrots and cook in salted water until al dente. Drain water and combine with rest of the ingredients. Refrigerate overnight and stir before serving. May also be made with beans or broccoli or other vegetables.

Mom spent a lot of waking hours trying to get Dad and Marcy to eat vegetables of any sort. This recipe fit the bill for both of them.
