1 pound ground beef
1 yellow onion chopped
1 28 oz can tomatoes
2 cans kidney beans, rinsed
1-1½ T chile powder
1 t oregano (optional)
1 t salt
½ t pepper

Directions:
Directions:
Brown beef in skillet or pot. Add onions to cook as the meat browns. Add salt/pepper and 2 t chili powder while the meat browns. Pour off excess fat (or if the meat is lean, keep the liquid that has cooked out of the meat). Add tomatoes and cook about an hour or 2, until the tomatoes no longer smell raw. Add the remainder of the chili powder, salt and pepper to taste Add beans. Cook an additional 30 minutes or so.

When Alberto’s parents came to visit in 1979, we wanted to make sure that they got a chance to meet the Heil clan and so went to Carlyle to visit. My Mom and Dad thought it would be fun to go to the Ozarks and camp there by Silver Dollar City (a newish attraction at that time). So Mom and Dad loaded up the pick-up truck with tent, food, all the amenities. We drove through the beautiful Ozark mountains (not the Rockies, you understand) and pitched camp. Mom and Dad set up the tent and put together the camp site. Dad always was the specialty cook and set about making a pot of his famous chili for dinner. Jose and Livia really wondered what they had gotten themselves into…..tent, chile? Jose whispered to Alberto that he didn’t think they wanted to eat chili and certainly didn’t want to sleep in a tent. Alberto found sandwiches for them and set up sleeping space for them in the van. Alberto, the kids and I got our only camping experience ever (raccoons and possums outside during the night). We went to Silver Dollar City the next days and enjoyed the activities. This was when Dad shared his trick of ramping up the flavor by adding the chili powder as the meat and onions were cooking.

When Tony graduated from 8th grade we had a few people over to celebrate and had chili. Betty Brandl joined us. What a wonderful woman.

Later as I appreciated chili peppers more, I created my own chili powder with oregano and a mixture of ground ancho/piquin/arbol chilis. Each chili hits you in a different spot and creates a great taste. Try that.
