1 T olive oil
1 medium onion, chopped
2 cloves garlic minced
1-2 T parsley, minced
1-2 cans tuna, drained (Wild Planet tuna cans are smaller and we use 2 cans; 1 for other less environmentally friendly tuna brands.)
Salt/pepper to taste
Sprinkle of red pepper flakes
½ pound of spaghetti
Grated Parmesan cheese

Directions:
Directions:
Heat olive oil and add onions to slowly cook. Add garlic and parsley and stir. Cook about a minute. Add tuna and mix. Season to taste with salt and pepper and add a pinch of red pepper flakes. Simmer while the spaghetti (1/2 pound or so) cooks. Drain spaghetti well and add to the tuna. Stir in about ¼ cup of Parmesan cheese. Garnish with additional parsley.

For a brief period of time we had a wonderful woman, Antonia, who would clean for us. Amazingly she would also cook dinner on her day. She made a chicken with rice that the kids loved. When they didn’t feel well she would warm up a coca cola and add cinnamon and nutmeg and nurse them with that. They loved that also. When she went back to Guatemala we were on our own again.

On the days that the kids were not feeling well, Alberto was in charge of their comforts. Bed, tv, and for lunch spaghetti with tuna. When I was sick, I got Campbell’s chicken noodle soup and crackers. Tony and Anne got spaghetti with tuna. I’ve never figured out the medical effects of that lunch but it seemed to work and they were all sparky when I made it home from work and sent Alberto off to the bike store.
