1 c shortening
¾ c sugar
1 egg
1 c cooked and mashed spinach
2 c flour
2 t baking powder
½ t salt
1 t vanilla
½ t lemon extract

Directions:
Directions:
Cream shortening and sugar. Add egg and spinach. Stir. Add flour, baking powder, salt, and flavoring. Stir well. Bake in a 350º oven for 10-15 minutes or until light brown.

I got this recipe when I did my second seminary internship at Westminster Presbyterian in Belleville. A parishioner bet me that she could bring green cookies to church (without using food coloring). I couldn't figure out how she would do it, but she brought these. They are truly green and good, too!
