2 chicken breasts, skinned, boned, halved and cooked*
8 broccoli spears (frozen or fresh) cooked until just bright green
1 can Cream of Chicken soup, undiluted
1/2 cup Hellman's mayonnaise
1/2 tablespoon fresh-squeezed lemon juice (can use more, depending on taste)
Shredded sharp cheddar cheese
Buttered bread crumbs

Preheat oven to 350º.

In baking dish, place 2 broccoli spears with 1/2 chicken breast on top. Combine soup, mayonnaise, and lemon juice. Spoon over chicken and broccoli. Sprinkle with the cheese and buttered bread crumbs. Bake, uncovered, 25-30 minutes. This may be assembled ahead of time.


*TO COOK CHICKEN:
Microwave 4 halves, covered with plastic wrap, for 7 minutes per pound. Carefully remove plastic from corner to prevent getting burned from the steam. Gently separate center of breast to make sure it is cooked through. If not, repeat for a couple of minutes.
