4 lb beef chuck roast
2 Tbsp Worcestershire Sauce
2 Tbsp Yellow Mustard
1 tsp salt
1 tsp pepper
8 oz Butter
1 medium yellow onion
8 Tbsp flour
2 - 10.5 oz cans condensed beef broth
12 ounces fresh sliced mushrooms (washed)
2/3 cup sour cream
2/3 cup cream cheese
2/3 cup white or red wine for marinating (I prefer Red)
4 cloves minced garlic
1 pkg egg noodles

Wash and cut the chuck roast into 1 inch or smaller pieces (bite size), then marinate in the Red or White wine for up to 2 hours in the fridge.

In the skillet melt butter then add your beef, sear until brown over high heat.

remove the beef from the pan (leave all the bits and liquid in the pan) using a slotted spoon and set aside, then add your diced onion and saute for 2 min (medium heat), then add garlic and continue to let them get soft (do not burn).

in a bowl add flour and 1/2 cup of your beef broth and mix together until it gets a little pasty or thick then pour it in the pan with your onion and garlic, then add the rest of your broth and bring to a boil. Add salt and pepper

Add your beef, Worcestershire and mustard to the pan and stir, let this simmer for 1 hour on low.

Add mushrooms and before you serve add the sour cream and cream cheese to the pan and stir in well for 5 minutes on low. Add more wine if needed and or cayenne pepper if the flavor is bland.

Serve over egg noodles
