1 pound lentil, soak overnight
2-3 beef bouillon cubes
1 onion, chopped
3 potatoes, peeled and diced
4-5 bacon slices, diced
1 stick pepperoni (chunk and cube)
1 can (28 oz) chopped tomatoes

Cover lentils in large pot with water. Add onions, bacon, and tomatoes. Simmer for 2 hours. Add bouillon cubes, potatoes, and pepperoni. Cook one more hour.

This recipe has gone through many iterations. The above recipe is Peggy and Albert's first recipe. I had never had lentils before they made it for me the first time. I have changed it a little each time I make it. Now, I use about half a stick of pepperoni and save the rest to throw into each bowl as I reheat it. I also use about a pound of bacon. You probably already have figured that out about me. The more bacon the better. I use beef broth and bouillon interchangeably. I also leave out the potatoes. I don't much care for potatoes these days, except for the occasional hash brown, tater tot, or French fry. I also now throw everything in the crockpot and just let it cook until the lentils are done.
