3 cups flour
2 cups sugar
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups peeled and chopped apples
1 cup chopped pecans
3 slightly beaten eggs
1 cup Wesson oil
2 teaspoons vanilla

Directions:
Directions:
Combine dry ingredients in a large mixing bowl. Stir in chopped apples and pecans.

In a second bowl, beat eggs. Add Wesson oil and vanilla.

Stir the wet ingredients into the dry ingredients by hand. Make sure to stir well, batter is very stiff.

Pour into ungreased tube or bundt pan. Bake at 350º for an hour or a little longer. Check with a toothpick. It should be clean when pulled out of the cake.

This cake is almost foolproof. It is very moist and stores for a long time. Annie often served it for breakfast during the holiday season. It can also be cut into quarters and frozen ahead of time.
