3 eggs
1 1/2 cups milk or half and half (or blend)
Salt and pepper
Pinch of fresh ground nutmeg
Plus whatever mix-ins you want like bacon, scallions, tomatoes, and Parmesan

Directions:
Directions:
Butter 12 ­cup muffin tin and line with pie dough. Whisk these ingredients together. Place the fillings into the pie crusts in the muffin tins. This makes it easier to make sure for an even distribution, or even do some vegetarian and some non­-vegetarian. Pour the custard over the fillings. Bake the mini quiches at 375 degrees for about 30 minutes, or until set. Cool on a wire rack.
