Ingredients: For the Salad 1 large head of fresh romaine lettuce, chopped 2 lbs boiled or steamed shrimp peeled and deveined ( size 16-20 ) 2 avocados, cut into large pieces 2 cups halved cherry or grape tomatoes 2 Tbsp diced red onion
For the Dressing 1/4 cup extra virgin olive oil 1/4 cup fresh lime juice 1 clove garlic, minced or smashed 1/4 cup chopped fresh cilantro 1 tsp dijon mustard salt and pepper

Directions: |
Directions:Add chopped romaine to a large bowl. Top with shrimp, avocado, tomatoes and red onion. Whisk together olive oil, lime juice, garlic, cilantro, mustard and salt and pepper. Pour the dressing over the salad and toss lightly to serve. This is very fresh and light. |

Notes: I made this for the 2017 Logs weekend where the theme was "Beach". I packed it in a carry out container . I also served pea salad, a small baguette, a package of "fish" crackers, a can of wine. Dessert was a S'mores pie with all the ingredients of same only in small tart shape. Each person got a beach bucket full of goodies including dinner, sun glasses, bubbles and hands wipes. The best part was the wonderful seagulls that we hung from the ceiling. They flew over us all weekend and never pooped on anyone.!!!
