1 1/2 - 2 pounds Antarctic Queen or similar fish
1 bottle (8 ounce) Italian dressing
1 lemon
1/4 cup chopped onion
2 tablespoons olive oil
1 pound fresh spinach
small amount of water
garlic salt, to taste

Lemon Wine Sauce:
1/2 cup white wine
2 tablespoons lemon juice
1 tablespoon corn starch
1 tablespoon water

Directions:

Preheat oven to 350º.

Pour Italian dressing over fish; cover and marinate for 1 hour in refrigerator. Drain. Place fish on baking pan, squeeze juice of 1/2 lemon over fish and bake, uncovered, until fish flakes easily. Steam spinach in a small amount of water; drain. Sauté onions in olive oil; remove from pan with a slotted spoon. Combine onions, spinach, and garlic salt. Serve cooked fish on bed of spinach; pour lemon wine sauce over fish and garnish with lemon slices.

LEMON WINE SAUCE:
In a saucepan, heat together the wine and lemon juice. Stir together the water and corn starch until smooth; add to heated liquids. Stir with small wire whisk until thickened.
