8 eggs
˝ cup milk
2 T butter
Salt and ground white pepper to taste

01 Crack eggs into a mixing bowl and beat until they turn a pale yellow.
02 Heat a heavy bottomed nonstick sauté pan. Add butter and melt.
03 Add milk to the eggs and season to taste and whisk getting as much air as possible into the eggs.
04 When butter in the pan is hot to make a drop of water hiss, pour in the egg mixture; don't stir for up to a minute or until the egg mixture begins to set.
05 With a spatula, gently push one edge of egg in the center of the pan while tilting the pan to allow the liquid to flow in underneath. Repeat with the other edges, until there is no more liquid left.
06 Turn off the heat and continue gently stirring and turning the egg until all the parts become firm.
07.Tramnfer to a plate when the egg are set but still moist and soft.
Hints: Stir in chopped fresh herbs and or grated cheese
