⅔ C. instant rice
1 C mayonnaise
1 Tbsp lemon juice
1 C. diced celery
1 Tsp grated onion
flaked coconut
⅛ Tsp pepper
1 Tsp salt
Tsp curry powder
1 C. ( 12 oz) diced cooked chicken
1 can chunk pineapple (drained)



Directions:
Directions:
Cook rice. Let cool.
Combine mayonnaise, lemon juice, onion, curry powder, salt & pepper. Mix well.
Combine chicken, celery, pineapple, and cocomut in a bowl.
Stir in the mayo mixture.
Add the rice and mix lightly with a fork.
Chill at least one hour.

Serve alone or on salad greens.
