Ingredients: 1 cup sugar 3 tbsp. melted butter 2 eggs 1 cup milk 4 cups flour 3 tsp. baking powder 1/2 tsp. salt 1 tsp. nutmeg
Lard, Crisco or cooking oil for cooking. Powdered sugar for dipping.

Directions:1. In large bowl mix sugar, baking powder, salt and nutmeg. 2. Add milk, melted butter and eggs. Beat well. 3. Add 3 cups of flour, beating until blended. 4. Add the final cup of flour and thoroughly mix into dough. 5. Dough should be soft and sticky but firm enough to handle. (May cover bowl with plastic wrap and chill for an hour.) 6. Remove dough from fridge and begin heating *lard in metal skillet on large burner. (Should be about 1 inch thick in skillet when completely liquified.) 7. Roll out half the dough at a time on floured surface to about 1/2 in. thickness. 8. Cut circles and holes with doughnut cutter and place on cookie sheets. 9. Test temperature of hot grease or oil by gently dropping a few doughnut holes into the skillet. Flip over as they puff. Holes cook and brown quickly. Doughnuts should cook in 2-3 minutes max. 10. Remove golden brown doughnuts and place onto paper towels or brown paper bag to absorb fat or grease. 11. Douse cooled doughnuts with powdered sugar.

Notes: Mary Helen's doughnuts were a favorite with the family and very popular at the parish bake sales. We had an uncle on the Lundahl side that couldn't get enough of these tasty dunkers. Uncle Jim was in sales and frequently traveled between Wenatchee, WA, and Medford, OR. He seemed to sense when Mom was whipping up a batch of doughnuts and would drop by unannounced for a visit.
