Thai Ginger Beef with Coconut Rice Recipe

For the rice:
1 c jasmine or basmati rice
1 can unsweetened coconut milk
1 T grated fresh or powdered ginger
3/4 c water

For the cucumber accompaniment:
1 very thinly sliced English cucumber, or thinly sliced peeled hothouse cucumber
1/8 c soy sauce
Juice of 1 lime
1/4 c fresh basil

For the Beef:
1 lb ground beef
1 red pepper
1 T minced garlic
1/4 crushed red pepper (optional)
1 T oil
Juice of 1 lime
1/8 c soy sauce
1 T sugar
1/4 c torn fresh basil
*chopped spinach or bok choy for added veggies

Directions:
Directions:
Bring water, ginger, and coconut milk to a boil
Add rice, stir, cover, cook on low for about 10 min until tender

Slice cucumber thinly
Add 1 T soy sauce, juice of 1 lime, 1/2 t sugar, and half the torn basil
Set aside

Sauté beef in oil until browned, set aside
Sauté pepper and garlic in same pan until softened, 2 min
Add crushed pepper if using
(can add chopped spinach or bok choy to stir fry for more veggies)
Add beef to pan w/red pepper
Add remaining soy sauce, lime juice and sugar
Stir to mix
Turn heat off and stir in basil just to wilt

Serve beef mixture over rice w/cucumber salad on top or on the side
