8 medium russet potatoes
1 1/2 cup cheddar cheese (grated)
1 can cream of chicken soup
1/4 cup melted butter
1 1/2 cup sour cream
3 green onions chopped
1/2 tsp salt and pepper

Directions:
Directions:
Cook potatoes in jackets in water with a bay leaf and salt. When cool, peel and grate into large mixing bowl.

In a second bowl mix together the rest of the ingredients. Pour mixture over grated potatoes and mix lightly.

Pour into greased casserole 13x9. Bake 350 for 30-35 min covered.

Remove from oven sprinkle cheese on top and return to oven for 10 min uncovered.

Casserole can be frozen uncooked for later use
Can use cream of mushroom soup for vegetarian
