1 cup raw pumpkin seeds
1 1/2 tsp olive oil
1/2 tsp garlic powder
1/2 tsp cayenne
1/4 tsp salt
1/4 tsp paprika
parchment paper

Directions:
Directions:
1. Wash the pumpkin seeds well to make sure all the pumpkin is off them. It works well to wash them, then let them soak for about 30 minutes. Then all the pumpkin goes to the bottom and the seeds float to the top.

2. Toss seeds with olive oil and spices, then spread out evenly on a baking pan lined with parchment paper.

3. Bake at 300º for 40 minutes, stirring about halfway through.

4. Let cool briefly and enjoy!

I made these for the first time this year and they turned out great! If your seeds are pretty wet, it may take longer to roast them. If they aren't done after 40 minutes, keep stirring every 10 minutes until done.

These are kind of spicy! I also made a second batch with just Lawry's season salt and salt if you don't want as much spice.
