1½ C cooked rice (brown or white)
¼ C mayo
¾ C Parmesan cheese
¼ C Minced onions
1 egg

Mix and press in pie pan (may not use all of mix if pan is smaller). Do not make too thick.

In a larger sauce pan, mix ¼ cup mayo, 3 tablespoons flour, ¼ tsp. salt and 1 cup milk. Add milk gradually. Cook over medium heat until thickened. Tum off. Add 1 cup Parmesan cheese. Add 3 cups of cooked chopped vegetables (cauliflower blend is good - broccoli, cauliflower, carrots). Mix well and pour into pie shell.

Bake at 350°F for 40-45 minutes. Lightly brown. Let stand 15 minutes before serving. Slice like a piece of pie.
